The Giant Red Sea Cucumber, AKA California Sea Cucumber or Parastichopus Californicus can be found off the coast of the Northwest Pacific Ocean. The species is commonly found in many areas near Baja California (north), off the coast of Vancouver Island, BC, and the Gulf of Alaska.

Once a year, (for three weeks only) in the month of October when sea cucumber muscle weight is at its greatest, the Canadian Government permits a very limited and short-term harvest of California Sea Cucumbers in the pristine, clear waters of the Pacific Northwest.
The best opportunities for harvesting occur during low tide. Once caught, the animals are processed by hand by separating the five muscle bundles from the skin with a knife. The skin is cooked or boiled and then dried into the product known as trepang, or beche de mer, which is used widely overseas for soups and other recipes.
